02Steps
- Soak red dates and goji berries in warm water until softened. Drain and pat dry. Pit the red dates and slice them thinly.
- Gently heat full-fat milk and caster sugar in a saucepan over low heat until the sugar dissolves. Do not boil. Remove from heat and let it cool slightly.
- Lightly whisk egg whites in a bowl until just combined and slightly frothy, but not stiff.
- Gradually pour the slightly cooled milk mixture into the whisked egg whites, stirring constantly to combine thoroughly.
- Strain the milk and egg white mixture through a fine-mesh sieve at least twice to remove any lumps and achieve a smooth texture. This is crucial for a silky pudding.
- Divide the strained mixture evenly into individual heatproof bowls. Garnish each bowl with the prepared sliced red dates and goji berries.
- Cover each bowl with cling film or a plate to prevent water droplets from entering. Steam over medium-low heat for 12-15 minutes, or until the pudding is just set but still slightly wobbly in the center. Do not oversteam.
- Carefully remove from the steamer. Serve warm or chilled.
