02Steps
  1. Rinse the threadfin fillet/fish and pat dry thoroughly with paper towels. Make a few diagonal slits on the thickest part of the fish if using a whole fish.
  2. In a small bowl, combine preserved olive leaves, minced garlic, minced ginger, light soy sauce, sugar, and white pepper. Mix well.
  3. Place the fish on a heatproof plate. Spread the olive leaf mixture evenly over the top of the fish.
  4. Bring water to a boil in a steamer. Once boiling, place the plate with the fish into the steamer.
  5. Steam for 8-12 minutes for a fillet or 10-15 minutes for a whole fish (depending on thickness), until the fish flakes easily with a fork.
  6. Carefully remove the plate from the steamer. Heat cooking oil in a small pan until smoking hot. Pour the hot oil over the fish and olive leaf mixture.
  7. Garnish with sliced green onions and serve immediately with rice.
